Louis Vuitton: Watch for correct heat stamping, and accurate date codes (not serial numbers, folks!). (As of 2021, Louis Vuitton has also started phasing out date codes in favor of microchips)

Chanel: Examine the quilting pattern — it should match up flawlessly across seams. Also, don’t forget to check for the serial number sticker and authenticity card.
